Walnut Chicken Salad Pita
"This walnut chicken salad pita is a delicious and simple meal that's perfect for taking to work for your lunch."
Ingredients
3 tablespoons (45mL) chopped, cooked spinach
1 tablespoon (15 mL) lemon juice
2/3 cup (150 mL) plain, non-fat yogurt
1 teaspoon (5 mL) dry mustard
¼ cup (50 mL) chopped green onion
½ cup (125 mL) finely chopped celery
1 tablespoon (15 mL) fresh dill
1/3 cup (75 mL) walnuts, chopped, toasted
14 oz (400 g) cooked skinless chicken breast, diced
1 apple, cored and finely chopped
1 teaspoon (5 mL) pepper
4 leafs romaine lettuce
2 whole wheat pitas, cut in half
Directions
1. In a large bowl, combine the spinach, yogurt, lemon juice, mustard, green onion, dill and celery. Stir to combine.
Add the chicken, apple, and walnuts, blend well, then season with pepper
2. Spoon a quarter of the mix into each pita half, tuck in a lettuce leave, and serve.
